Childhood Memory Spagetti-o Soup

Can of Spagetti-o's
Cooked meat, optional
Various vegetables, such as onions, carrots,
broccoli, green peppers, zucchini
Garlic
Oil
Herbs & Spices (your choice)
Salt & Pepper

 
 

Whether you're a fan of meat or veggies, one can add varied items to this childhood favorite. Grab your most desired ingredients and sautee them together with garlic, salt, a bit of oil and pepper and desired spices. Add the delicious O's. Cook until heated through.

Serve with a salad and butter-herbed garlic bread.
   

 


Aunty K's Onion Soup

Onion
Garlic
White Wine
Butter
Salt & Pepper
Soup Stock (any kind)
Bread for Toast
Mozzarella or Swiss Cheese

 
    Sautee one and one-half cups of thinly sliced onion with a clove of garlic in butter with salt and pepper, until lightly brown. Add some white wine to taste. Add 6 cups of soup stock (for example Campbell's beef, chicken or vegetable, or home-made). Let simmer on stove-top for approximately thirty minutes.

While soup is cooking, take a roll or slice of bread, lather with butter and garlic salt, and toast until brown.

Pour soup in an oven-resistent casserole dish, and place toast slices on top. Sprinkle with grated mozzarella or swiss (or both) and broil in oven until cheese is melted ( about ten minutes), and voila!
